The  TotOx (Total Oxidation) parameter is used to measure the oxidation state of fatty matter by considering the different forms of fatty acids oxidation (including the primary and secondary products of the oxidation).

During lipid oxidation, it is often observed in the first instance that the peroxide value increases and then decreases as the hydroperoxides decompose. Consequently, the consideration of the peroxide index (PI) and the p-anisic value (p-AnV) allows a better estimation of the progressive oxidation state resulting from the degradation of fats and oils.
