The presence of residual fat and protein material on a surface is a fault as well as a cleaning potential danger of bacterial growth and biofilm. The YELEN method proposes a swab followed by a fluorimetric measure to describe the quality of the cleaning measuring the respective levels of residual lipids and proteins in the same sample. The presence of detergent is also detected.
